Max Level Questions

Hi,
So I have 2 Nimzos. One a max level 50, and one a max level 75. The level 75 one has has Attack Boost I, II, & III. Why can one attain a higher level than the other? Furthermore, can you make monsters go higher than 75, say up to level 100? Thanks.

Might I add that the 2 Nimzos paired with Estark (with the Oomphle ability) are quite good for recruiting Metal Slimes. I've gotten it up to like 20%.
